Wanderlusted

So, like a gazillion other girls I live my life by quotes. In a way they help us through life. Quotes are reassuring, some definitely tugging at your heartstrings.

I think people are very selfish in today's society. We need to love more, to reach out and give more to others. The world would be a much happier place, wouldn't it? 

We can change the world, one person, one act at a time.

Ruidoso, New Mexico has been my family's playground for quite sometime now. Have I mentioned i'm half Indian? Well, that's a story for another day. Quite a few years ago my grandparents rented a cabin out every year up in the mountain Labor Day weekend to watch the ponies race, and have a nice week of vacation. After my grandfather passed away, my grandma has continued to rent out the cabin, and started to invited family to join. We have gladly accepted, obviously. Sadly, my dad has not come along in sometime...my conclusion is he feels like the odd one out, it is just us ladies after all.

I haven't been in quite sometime due to school or work sneaking its way onto my schedule. In fact, the last time I joined in on the festivities was 4 or 5 years ago. I never had the chance to write or post anything on our little adventure, so I figure now's the perfect time!
I am happy to say i'll be reuniting with this beautiful city full of hidden treasures next weekend!

I'm pretty excited to have mom's camera in my hot little hands to hopefully get much better, professional pictures this round. Oh, and we are staying in a new condo this time! I'm a tad bit sad however, since our last was on the mountain and it was such a beautiful place to go for a run. Hopefully I can find the beauty in this new gem. 



These are pictures from our cabin up in one of the mountains. Breathtaking i'll tell you! (Especially in the morning!)







This is the main and busiest street in Ruidoso, which includes shops and restaurants for oodles of people.



The entire trip I was teasing mom if I saw a bear I would go to pet it. She probably slept with one eye open each night, to make sure I stay put. Then I went for an adventure to stumble upon bear droppings! Yessss evidence! They must be around somewhere! I was ecstatic. 


What a lovely view from the racetrack, I must say! 


And boy how I have changed over the past 5 years!





This next shot is my pride and joy (so far). It's extremely hard to get a shot like this, with the horses running so fast in such a short distance especially since it's the biggest race of the weekend. Plus, everyone is lined up against the railing and it's almost impossible to mosey on in. 



Cloudcroft, NM Day Trip!
Another place we like to visit each time we're here. It's not far from Ruidoso, and my parents have some history here. (Hopefully I can reveal that in the next post, stay tuned!) 


We got to check out some scenery on the way to our destination with such wonderful views. This place is truly a gift from god.

Another family favorite is visiting White Sands (also a short trip) to play in the sand for a bit. I highly recommend this, it will instantly turn you into a kid again.

On our last day at the races, we ran home for one more item before hitting the road. I'm so glad something made us go back because right there in front of us was a momma black bear and her 2 cubs! I toyed with mae saying I was going to get out of the car and go pet them and she became so terrified I had to stop. I did however roll down the window to get a few snaps.





Have you ever seen a wild bear this close? I bet you haven't! What a warm farewell!

If you would have asked me a few months ago if I ever saw myself writing a blog on food, I would have probably laughed. I have never been a good cook, even decent for that matter. I'm the girl who burns the cookies, or gets the ingredients wrong... I will find a way to screw up something.

I have never had any interest in cooking until just recently. I have become more of a homebody, mostly because i'm saving money. There's also the extra time I have to spend at home since I have started to workout before trotting to work. 

So, I got the itch to start out small and find something delicious sounding, yet healthy. I have got this recipe from Never Homemaker thanks to Pinterest. 



Avocado Egg Salad Wrap

First off, you will need the tasty ingredients of:



4 hard-boiled eggs
1 large avocado, cubed as shown below
2 tablespoons Mayonnaise or Vegenaise (I used Regular Mayo)
1 teaspoon curry or fenugreek powder
Pinch of salt and pepper
Tortillas of choice
First boil the eggs in water for 5 minutes. 

When the timer goes off immediately take the pan and dump the boiling water out....


To then pour cold water over the eggs, and let sit for around 5 minutes or so.


Then carefully bang the each egg on the counter to break the shell, and start to peel the shell off. The rest should come off pretty easily once you get a good bit off. All your eggs should look as follows.


Next, time to chop the eggs into bits.


Same with the avocado, below is the easiest way to cut an avocado up.


Put these ingredients in a bowl along with the 2 tbsp mayo of choice, pepper as needed, and mash together. I left out the curry and salt (I've never tasted curry and wasn't sure if I would like it.) This made enough for 2 wraps, and took under 15 minutes to make!

I chose the Garden Spinach Herb Mission wraps, and I highly recommend them, it was so delicious and I was very proud of myself for not ruining something!

Viola!



Who knows, maybe i'll be the next Rachel Ray! ;)

We had a suite at the Ringling Bros. Circus Dragons, thanks to Lucas. I will always take up an opportunity to do something out of the ordinary, as I get bored easily.

I'm not sure about any of you, but I haven't been to a circus since I was probably 8 or 9 years old! I must say I was rather excited to experience it all over again! The only thing I can remember from my childhood experience is the smell of the animals filling the stadium...it certainly has changed in time.

What I wore. These are my new shoes found here I posted in a recent blog, I was so excited to finally wear them. I was going for a street look, although the picture is blurry along with the rest, (hence the title) what do you think?

My favorite part, the elephants. Aren't they such magnificent creatures!? I just adore them, and I am so sad of how they are treated. When I was younger a close friend of faja's trained the elephants, so after the circus emptied, we got to go back in the stables with them. It's too bad I don't recall most of these precious times as I was too young.


Riders in the circle of death! They fit 6 cyclists in that tiny ball, can you imagine.

After all, it surely was a delightful evening.
